Urad Vada (Medu Vada), one of the famous breakfast item in southern part of India. Enjoyed with sambar & coconut chutney, a south Indian specialties. Mostly served in combination with Idli.
INGREDIENTS

2 cups urad dal - soaked in water for 2-3 hours 4 green chilies - finely chopped 10-15 curry leaves - finely chopped 1/4 cup fresh coconut - dice into 1/4 cube pieces 4 medium sized onions - finely chopped |
1/2 cup coriander leaves - finely chopped 1/2 inch ginger (optional) - finely chopped Common salt - as per taste Cooking oil - for deep frying |
PROCEDURE
Remove excess water from soaked urad dal & blend it in mixer to make a fine batter. Add chopped green chilies, chopped curry leaves, dices coconut, chopped onions, chopped coriander leaves and salt into the batter and stir rigorously to form an thick floppy uniform mixture.
Take a lemon sized batter on a plastic greased palm, lightly press/pit with another palm. Make a coin sized through hole at the center of it with the help of a finger to make it look like a donut. Heat cooking oil in a frying pan and deep fry it on medium to high heat until golden brown.
Urad vada is now ready. Serve it with hot sambar and/or coconut chutney.
