Kharvas is a delicious Maharashtrian sweet made from colostrum (first three days milk of lactating cow or buffalo). As colostrum is not easily available all the times, here is an innovative instant kharvas recipe that do not need colostrum but a normal high fat milk. Kharvas is a marathi name. It is also known as ginnu, junnu, posu, etc. is other parts of India.

 

INGREDIENTS

1 cup high fat milk

1/2 cup condensed milk

1 cup curd

1/4 cup milk powder

1/2 cup jaggery (gud) - grated

1 teaspoon cardamom (ilaichi) powder

4-5 strands of Saffron (optional) - crushed

 

 

PROCEDURE

Pour milk, condensed milk, curd, milk powder and crushed jaggery in a mixing bowl and blend it to form a uniform mixture.

pour this mixture in flat vessel and sprinkle cardamom powder and crushed saffron on it.

Pour a glass of water in a pressure cooker, put a steamer plate at the bottom of cooker.

Put the vessel on steamer plate and put a lid on vessel (to avoid water droplets being fallen on the surface of mixture). Now close the cooker, remove whistle and steam for 15-20 minutes on a medium heat.

Remove the vessel from the cooker and let it cool down to room temperature. Put it in a refrigerator for about 2-3 hours before you can cut it into pieces. 

The kharvas is ready to serve. Serve it cold.
