Gajar Halwa (Carrot Pudding) is an Indian sweet prepared by mixing grated carrots, ghee, milk, khoya, sugar and nuts.
INGREDIENTS
8-10 medium sized carrots (gajar) - grated 2 cups full fat milk 1/2 cup khoya 4-5 tablespoon ghee 10-12 tablespoon sugar |
4-5 almonds (badam) - thick sliced 10-12 cashew nuts (Kaju) - cut into 2-4 pieces each 20-25 dry golden raisins (kishamish) 1/4 teaspoon green cardamom (ilaayachee) powder |
PROCEDURE
Put 2 tablespoon of ghee in a pan, add grated carrots into it and put it on a medium heat. Keep on stirring until the moisture in the carrots almost evaporates.
Add the milk and keep on stirring until the milk is almost gets soaked by carrot.
Add khoya & sugar and stir until sugar dissolves completely.
Now add remaining ghee, cashew nuts, sliced almonds, dry golden raisins and cardamom powder and mix it properly.
Cook for about 2 minutes and the gajar halwa is ready to serve.
Garnish with dry nuts and serve hot, warm or cold.
